Bacon Scallops with Garlic Butter Sauce

Crisp bacon, tender-melt-in-your mouth scallops with the most heavenly butter sauce. So fancy yet so easy!

    Prep Time

        •    Prep time: 5 minutes
        •    Cook time: 25 minutes
        •    Yield: Serves 4

        •    1 pound scallops
        •    1/2 tsp dried basil
        •    4 slices bacon, diced
        •    1/2 tsp dried oregano
        •    3 cloves garlic, minced
        •    1/2 cup unsalted butter
        •    2 tbsps chopped fresh parsley leaves
        •    1/2 tsp crushed red pepper flakes, optional
        •    Kosher salt and freshly ground black pepper, to taste

    1. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; reserving 1 tablespoon in the skillet. Transfer bacon to a paper towel-lined plate.
    2. Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry. Season scallops with salt and pepper, to taste. Working in batches, add scallops to the skillet in a single layer and cook, flipping once, until golden brown and translucent in the center, about 1-2 minutes per side. Set aside and keep warm.
    3. Melt butter in the skillet. Add garlic, oregano, basil and red pepper flakes; season with salt and pepper, to taste. Cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in bacon and scallops.
    4. Serve immediately, garnished with parsley, if desired.

    Honey Glazed Salmon

This honey-glazed salmon is juicy, flaky, and so satisfying! Squeeze fresh lime juice over this honey glazed salmon and serve with steamy, fluffy white rice. Mmm… mouth. is. watering!!

    Prep Time

        •    Prep time: 4 minutes
        •    Cook time: 6 minutes
        •    Yield: Serves 4

    • 4 (6 oz each, or about 24 oz total) Salmon Filets, boneless and skinless
    • Salt and black pepper, to taste
    • ¼ cup all-purpose flour
    • 2 Tbsp light olive oil or any high-heat cooking oil
    • ¼ cup honey
    • 2 Tbsp soy sauce
    • 1 medium lime, cut into wedges
    • Chives, to garnish (optional)

    1. To make the glaze: In a measuring cup, combine ¼ cup honey and 2 Tbsp soy sauce. Stir until well combined and set aside.
    2. Season both sides of your boneless, skinless salmon filets with salt and pepper. Pour ¼ cup flour into a shallow plate and dredge both sides of salmon in flour, shaking off excess flour.
    3. Heat a large non-stick pan over medium heat and add 2 Tbsp light olive oil.
    4. Brush the first side of salmon generously with half of the glaze and once oil is hot, add salmon to the pan (glaze-side-down). In the pan, brush the second side generously with remaining glaze. Saute salmon on the first side for 3 minutes, turn and sauté second side another 3 minutes. Glaze should be caramelized and salmon should be just cooked through and opaque inside when flaked.
    5. Squeeze fresh lime juice over the top to serve and garnish with chopped chives if desired.

Cooks Tip: If salmon is browning too quickly, reduce heat so you don't burn the glaze. Squeeze fresh lime juice over the top to serve and garnish with chopped chives if desired.

NOTE: Do not cook over high heat or you will burn the glaze.
